Summer Fun!

This summer I plan to go to the beach a lot and work a lot. Summer is gonna be so stinking fun!!!!! LOL!! The beach is one of my favorite places to go. I like to eat sunflower seeds and bubblegum when i am on the beach! I like to dip my little toes into the shallow water. I like to build sandcastles with my buddies and my boyfriend. There a lots of good places to go to eat at the beach, for example: Bethany Blues, Grottos, Phillips Seafood, and my personal favorite crabby dicks! One of my favorite holidays falls in summer... THE FOURTH OF JULY!

I love the fourth of July because ever since I was a little girl my family watched the fireworks and ate cheeseburgers and hot dogs, nothing beats a yummy hot dog on a hot summer day. I also love to watch the vibrant fireworks while sitting on an old quilt on the grass. The only thing that kinda sucks about fourth of July is the bugs. Last year for the fourth of July I went to the beach for the whole week and watched fireworks at Bethany beach. Unfortunately last year the weather wasn't great. But I'm hoping for the best this year.

This year I'm going to start my summer off with a BANG! Shortly after I graduate, I'm headed to florida with a bunch of people for senior week. In florida the water is clear and the sand is white. The food is really good too. My favorite thing to do in florida is kayak and look for marine life. Last time my friend an I were chasing an entire pod of dolphins. We already have a lot planned for my trip this summer, a kayak tour and a sunset dinner cruise. I just cant wait. I'm looking forward to Kayaking, jet skiing, boating, and much more!

Summer is such an amazing time, and as kids we're so lucky to have it off. I'm dreading the day when I have to go to work during the summer. I'm planning on having an extremely fun summer this year to celebrate my graduation from Newark Charter high school. I'm also looking forward to not having to come back august 15th for field hockey preseason.

This summer one of my biggest goals is to stay in shape, go to the gym as much as possible, run as much as possible, and stay active. I really want to try and do Go Ape! this year. Summer is such a good time to be active so it shouldn't be that hard.

Overall, my summer is going to be lit.

Graduation


Graduating from Newark Charter High School means absolutely nothing to me. High school is nothing but an obstacle that everyone is forced \to overcome. It's depressing that a lot of people call high school "the best days" of their life. If that's truly the case, their life must be pretty awful. There is not one thing I will miss when I graduate. I won't miss the anxiety placed upon my shoulders by the administration, the fake bitches who act like they're my friend, the incredibly nosy community of parents, teachers who think they're scary because they can give us a yellow piece of paper, and Mr. Meece who loves to walk around the school and pretend like he knows students whenever there are visitors.
Honestly, I don’t think I will keep one friend that I have right now in the future. Maybe one or two, but not many from Newark Charter High School. What’s really sad is that I couldn’t care less. Sure. I might cry when I walk on that graduation stage May 20th, 2017 but, it's not because I’d sad, its because i'm elated, relieved, and happy.  Happy I’ll never have to hear the distinct tone of the Newark Charter classroom phones.. Happy I’ll never have to look at the sickly sweet faces of all the fake bitches at charter (teachers and students).. Happy I’ll never have to bite my tongue when a teacher threatens the class with meaningless pieces of paper.. Just happy.
And yeah i’ve had good experiences at Newark Charter, I’ve had fun during spirit week and fun at prom. I’ve had amazing teachers who inspire me to challenge myself and make a positive difference in this world. I’ve had fun playing sports and participating in extracurriculars. I’m thankful for all the amazing teachers at charter who actually care about their students and work their asses off for us.
Its unfortunate but, the bad really does outweigh the good when it comes to my experience at Newark Charter. So no, I’m not sad I’m graduating. I’m beyond happy, in fact, i’m praying that I will never see anyone from charter again.
I have plans to never look back once I leave Newark Charter High School. Although I am grateful for the opportunity to have one of the best educations in the state, I’ve had enough. I’m grateful for some of the amazing people who have influenced me for the better at newark charter. I also am incredibly thankful for what I feel is the greatest thing this school taught me.. To be a self advocate. Students at Newark Charter don’t hesitate to stick up for themselves and fight for what they deserve. This is a quality that I have the school and my teachers to thank and a quality that will lead me to success throughout life.

So, in sum, I guess my graduation is a bittersweet ending, bitter because I strongly dislike the bitches i go to school with, but sweet because I had some pretty amazing teachers and role models.

Coconut Cake Recipe

Ingredients

  • 1 cup white sugar
  • 1/2 cup applesauce
  • 1/4 cup butter, softened
  • 2 eggs, separated
  • 1 tablespoon vanilla extract
 
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 (13.5 ounce) can coconut milk
  • 1 1/4 cups unsweetened shredded coconut

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper liners.
  2. Mix sugar, applesauce, and butter together in a bowl.
  3. Beat egg whites in a glass or metal bowl until medium peaks form. Lift your beater or whisk straight up: the tip of the peak formed by the egg whites should curl over slightly.
  4. Stir egg yolks and vanilla extract into applesauce mixture; fold in egg whites. Stir in flour, baking powder, and salt until just combined. Beat coconut milk into batter until smooth, about 1 minute. Beat in shredded coconut for about 30 seconds. Pour batter into the prepared muffin cups.
  5. Bake in the preheated oven until a toothpick inserted in the center of a cupcake comes out clean, about 20 minutes.

Recipe in honor of Pi Day


Tricia's Fantastic Fudge Pie

"Great pie for chocolate lovers. Very rich. Easy and delicious! Serve hot with vanilla ice cream and a sprinkling of nuts if desired."

Ingredients

  • 1 (9 inch) pie shell
  • 2 eggs, beaten
  • 1/2 cup butter, melted
  • 1 cup white sugar

  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 cup semi-sweet chocolate chips (optional)

Directions


  1. Preheat oven to 325 degrees F (165 degrees C).
  2. In a medium bowl combine eggs, melted butter or margarine, and sugar. Stir in vanilla extract. Set mixture aside.
  3. In a separate bowl mix together flour and cocoa powder. Pour egg mixture into flour mixture and stir until thoroughly combined. Fold in chocolate chips if desired. Pour into pastry shell.
  4. Bake in preheated oven for 30 to 40 minutes. Serve hot.

              In my opinion, global warming is the worst problem of all. The earth is deteriorating at a rapid rate and we're all just walking around waiting for it. It's not enough to just recycle when its convenient or donate a couple dollars to an environmentalist organization. We need to be working harder to stall and eradicate the process of global warming. So in the end, sexism, racism, greed, terrorists, cancer and all of our petty problems won't matter if the earth is engulfed in flames.

Best Chocolate Chip Cookie Recipe

Ingredients: 

  • 8 tablespoons of salted butter
  • ½ cup white sugar (I like to use raw cane sugar with a coarser texture)
  • ¼ cup packed light brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1½ cups all purpose flour (more as needed - see video)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt (but I always add a little extra)
  • ¾ cup chocolate chips (I use a combination of chocolate chips and chocolate chunks)

Directions:

  1. Preheat the oven to 350 degrees. Microwave the butter for about 40 seconds to just barely melt it. It shouldn't be hot - but it should be almost entirely in liquid form.
  2. Using a stand mixer or electric beaters, beat the butter with the sugars until creamy. Add the vanilla and the egg; beat on low speed until just incorporated - 10-15 seconds or so (if you beat the egg for too long, the cookies will be stiff).
  3. Add the flour, baking soda, and salt. Mix until crumbles form. Use your hands to press the crumbles together into a dough. It should form one large ball that is easy to handle (right at the stage between "wet" dough and "dry" dough). Add the chocolate chips and incorporate with your hands.
  4. Roll the dough into 12 large balls (or 9 for HUGELY awesome cookies) and place on a cookie sheet. Bake for 9-11 minutes until the cookies look puffy and dry and just barely golden.Warning: DO NOT OVERBAKE. This advice is probably written on every cookie recipe everywhere, but this is essential for keeping the cookies soft. Take them out even if they look like they're not done yet (see picture in the post). They'll be pale and puffy.
  5. Let them cool on the pan for a good 30 minutes or so (I mean, okay, eat four or five but then let the rest of them cool). They will sink down and turn into these dense, buttery, soft cookies that are the best in all the land. These should stay soft for many days if kept in an airtight container. I also like to freeze them.

Little Things I Want To Change Before College



  1. Read More: Before high school I had a lot more time to read for my pleasure. I loved fictional series, and couldn't read them fast enough. However, with my rigorous high school course load, sports, clubs, and social events--I haven't had much time to read for myself. Besides the awful books forced upon me by my teachers. So one thing I want to change before I go to college, because I'm assuming I may have more time on my hands is to read more for me
  2. Draw More: Like reading, my drawing dissapated as I entered high school. This summer I'd like to keep a sketchbook. Sketch something everyday, drawing has always relaxed me, and allowed me to more easily focus. I'm hoping with more time on my hands i can return to my old pass time. 
  3. Keep an Agenda: Right now I have an agenda book for school, but as a graduate I would like to start keeping a written agenda for my life, not just school. I plan to buy a weekly agenda and keep all of my goals, plans, and events listed. This will keep my mind clear, and my busy life on track.
